When I try and encourage people to start their day on waking with green energy, fibre and phytonutrients rather than the typical fat and carbohydrates they are used to, this smoothie is my gateway drug. Fresh pineapple overwhelms just about anything with tropical happiness so it is easy to imagine this as having more of a sweet treat rather than a bunch of kale for breakfast .

For the smoothie
1 cup fresh pineapple
1 cup chopped kale
1 cup sliced cucumber
1 cup coconut water or just water
Place all ingredients on the highest blender setting for 1 minute. If you would like the consistency a little thinner just add a little more water and pulse in the blender for a moment.
