You have definitely passed celeriac by in the produce section It looks a bit witchy and let’s just say it, how do you make something so ugly taste good? But at 1/3 the calories of potatoes, it is the perfect way to feel like you are treating your self with starchy carbs, when in fact you are mostly getting nutrient packed fibre. If you love hash browns or latkes as much as I do, but cannot afford it on your waistline, then feel free to splash out on these potato-esque delights!

1 Celeriac shredded
1 tub marsarpone
2 eggs beaten
1 scraped seeds from fresh vanilla pod or 1 tbls vanilla paste
2tbs soft butter
1 tsp Salt
1/2 tsp pepper
Peel rough outside then grate Celeriac
Add everything to a large bowl and fold the mix together thoroughly
Set a well oiled grill pan on the stove on med-high and add heaping tbls dollops to the pan flattening each with a spatula.
About 2 mins per side or until dark golden.
Remove to a baking paper lined tray and keep warn in a 100C oven until ready to serve.
***TIP
Can make ahead and refrigerate. Reheat in a 180C oven for 6-8 mins
